Great Pairing Menu
When I'm creating a menu, my goal is to pair the wine and food so that each complements the other's most desirable traits. The wine is always my starting point. I taste it, and note what I like and what it brings to mind. I think about balancing taste and flavor as well as texture and color. When I have an idea for a few dishes, I start cooking. As I cook, I taste, going from wine to food and back, until I've created a pairing that engages all the senses.
